Hot and Crunchy Halibut – Wow!

This is a very good recipe. In fact, it’s the most popular dish on my Alaska lodge menu.

A thick halibut fillet is breaded with a special mixture of tortilla chips, nuts, and spices. Then I fry it to a rich brown on both sides, and finish it in the oven.

I serve this moist and tasty, hot, sweet and crunchy piece of fish on a Mango Jalapeno Mayonnaise, and garnish it with a few squeezes of a Chipotle Aioli.

That looks like it would be good for more than just halibut.

And I don’t know what is wrong with me, I should know better than to read one of your Lenses at 1:30am, just before going to bed! :P

I don’t like fish, but I think that this recipe just might change my mind! Must pass it along to the cook in our family. Can’t wait to see his face when I tell him that I want fish for dinner!
